I used fresh spinach this time.  I’ve used both fresh and frozen with no problem.  By soggy do you mean cooked (LOL)?  I wilted the fresh spinach in the same frying pan I cook the chicken in...I put it in the pan, turn the heat off and slap the lid on for a few minutes.

No, by soggy I mean from a can or frozen.. it’s all wet and nasty. I just can’t eat it. I’ll try it with some fresh spinach.. mmmmmmmmmmmmmmmmm :D

You can use frozen but you have to thaw it and wring the water out of it by squishing it out in paper towels.  I like fresh so I use fresh.  Plus, this recipe takes all day to make.  I only make it a couple of times a year so I don’t scrimp by using frozen.
